Cheese
Even if you skim through our menu you will notice a variety of amazing Irish cheeses.
Starting with Knockanore farmhouse smoked mature cheddar based in Knockanore County Waterford is smoked in a special smokehouse on the farm using oak locally sourced in the neighboring town of Lismore.
The Fivemiletown Creamery in County Tyrone have been producing award winning specialty cheese for over 100 years! They supply us with the goats cheese we use to make our famous breaded flat cap mushroom and goats cheese burger.
Cashel Blue comes from Beechmount Farm County Tipperary. Cashel blue is famous for being the very first Irish blue cheese hitting the market in 1984.
Wicklow Farmhouse Blue Cheese comes from a small family business in the South East of Co. Wicklow.
The Hempenstall family have been milking cows on a small dairy farm at Curranstown, Arklow, Co. Wicklow for the past 50 years.
Macroom Buffalo Mozzarella comes from Ireland’s first and only herd of of milking water Buffalo. The Farm is based in County Cork and owned by Buffalo farmer Johnny and his wife Geraldine.
Dozio’s soft cheese is made by Danilo and Helen Dozio in a small creamery in Charlestown County Mayo
Meat
Sheerin’s Meatin Place is a small shop based in Ballymote County Sligo but the standard of meat that comes from here is very high. Sheerin’s is famous for their dry aged beef which is hung for a minimum of 30 days. Not to mention his Sweet Cured Bacon, low in salt, cut thick it’s cured on the premises all this and their Award winning sausages make them extremely desirable to work with.
Derek Sherlock Meats in Tubbercurry County Sligo provide us with the finest selection of beef, and chicken.
Our lamb comes from Castlemine Farm which has a long and rich heritage located in the heart of Roscommon. The Allen family have farmed the land since the 1820’s when Castlemine Farm was in the hands of Walter (Wally) Allen. He was always of the opinion that the grass fed to animals gives a sweeter taste especially in limestone regions such as Roscommon. The farm has now passed to the next generation and is now run by Sean’s sons Derek and Brendan Allen.
Fish
Most of our fish is supplied by John Flynn Fish Monger based in County Sligo except for our smoked salmon which comes from Kinvara. Kinvara Smoked Salmon was set up in 1999 and was the first 100% Organic Smoked Salmon company in Ireland. Based in County Galway on the captivating shores of Galway Bay, situated in-between the rugged Burren and the vibrant city.
Salad
Croghan’s Organic center is based in Boyle Co Roscommon supply us with year-round organic salad, herbs and vegetables, freshly cut, on-the-day seasonal contents.
